I’m feeling a little *extra* today. Not the slang “extra” (trying too hard, over the top, excessive, and dramatic), but the “I want a bit more, a little excess, some frill” kind of extra. And it’s so much fun!! The great part about it is it doesn’t have to be complicated or extreme. I’m just looking for a little more…pep. I think I’ll bake...

something that, with one small ingredient changed, changes the entire tone of the treat,
something that’s sweet, chocolatey, and a little bit *more*,
something that smells like magic’s in the air...

These cookies look like regular chocolate chip cookies but have an extra coconut taste and scent that gives them a wonderfully exotic, alluring vibe!

Prep time: 20 minutes, Bake time: 12 minutes
Makes 24 cookies
Ingredients
  • ½ cup (113 g) unsalted butter, room temperature
  • ¾ cup (161 g) brown sugar
  • 2 tbsp (28 g) white sugar
  • ½ tsp – 1 tsp coconut extract*
  • 2 large egg yolks
  • ¼ cup maple syrup, amber grade
  • 1 ½ cups (232 g) all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup (143 g) semi-sweet chocolate chips
  • *for a lesser coconut flavour use the lower value
Instructions
Let’s get extra...
Preheat the oven to 325˚F.
Line a baking sheet with parchment paper. Set aside.
Add the butter to a medium bowl and whisk until smooth. Add the sugars to the butter and mix until creamy.
So far, so good!
Add the coconut extract, egg yolks and maple syrup, mixing well after each addition.
What an amazing scent filling the air!! Extra, indeed!
Fold in the flour, baking soda and salt.
Stir in the chocolate chips.
Oh, I can’t wait to try this one!
Drop the dough by the tablespoon onto the baking sheet, 2 inches apart.
Bake for 12-15 minutes or until the cookies are a light golden brown at the edges.
Yum, yum, yum! Here we go!
Allow the cookies to cool on the baking sheet for a few minutes before transferring to a cooling rack.
These cookies have an “on-vacation” vibe that’s cool, fun, and just a little bit extra which is exactly where I want to be!
