It’s a cold morning, quiet and still. It’s raining but it feels cold enough for snow. On these mornings, the weather *is* the mood. In that case, I’m in need of warmth – I think I’ll bake.

something that overshadows the mood (with coziness),
something that’s not fancy, in any way,
something with a warm, comforting smell as it bakes,
something with a crisp, maple-y sweet, oat taste...

These cookies have a “warming effect” from the heat of the oven (as they bake) to the hot tea accompanying them. Ah, toasty, warm, perfect!

Prep time: 15 minutes, Bake time: 15-17 minutes
Makes 36 cookies
Ingredients
  • 1 cup (226 g) unsalted butter, room temperature
  • ¾ cup (160 g) brown sugar
  • ¼ cup + 1 tbsp (60 g) white sugar
  • 2 tsp vanilla extract
  • 2 large eggs
  • ¼ cup + 2 tbsp maple syrup, amber grade
  • 1 ½ cups (232 g) all-purpose flour
  • 1 tsp salt
  • 2 cups (210 g) rolled oats
Instructions
Let’s shake off this cold...
Preheat the oven to 350˚F.
Line a baking sheet with parchment paper.
In a medium bowl, whisk the butter until smooth. Add the sugars to the butter and mix until creamy.
Add the vanilla, eggs and maple syrup, mixing well after each addition.
Deliciously sweet scents fill the air...
Fold in the flour and salt.
Stir in the rolled oats.
I think this is going to be just what I need...
Drop the dough by the tablespoon onto the baking sheet, 2 inches apart.
Bake for 15-17 minutes or until the cookies are light golden brown at the edges. Let the cookies cool completely on the baking sheet.
Enjoy a few while they’re warm, heck, dip them in the hot tea as you eat them for an extra boost of heat.

Emotional Baking
