Emotional Baking
unsure double chocolate cake.
Most days, there’s an innate sense of certainty toward most things. It inspires confidence that’s quick to spread but, not today. Today, it’s a feeling that’s hesitant and unsure. It’s surprising how quickly it changes the mood...
How to get back on steady ground when everything’s coming up loud and vibrant and full of emotion? Look inward, take the time to think things over, talk to a friend, and find your footing. The answers, along with confidence and certainty, are sure to follow. Until then, relax into this unsure mood (and bake)!
I'm feeling...
Bake a cake. A chocolate cake. And make it a double.
A cake...
that’s all chocolate with a hint of cake,
with a deliciously fudgy flavour and a moist, thick crumb,
that’s easy to make and a fun break from the mood,
that’s deep, rich, and luscious,
and that, in the process of making, further adds to a feeling of confidence...
TLDR:
  • Unsure?
  • Bake
  • Double Chocolate Cake
  • Fudgy, rich, luscious
  • Easy
This cake is everything a chocolate cake should be – unforgettable. Plus, it goes well with tea, coffee, and a confidence-boosting conversation with a friend. Fruit with whipped cream can add a little something extra as you sit back and think things over. Go ahead and take your time, and when it comes to matters of the heart - take all the time you need.

Prep time: 25 minutes, Bake time: 55-65 minutes
Serves: 8-10
Ingredients
  • Spray oil, for greasing the bundt pan
  • ½ cup (110 g) semi-sweet chocolate chips
  • 2 ¾ cups + 1 tbsp (329 g) all purpose flour
  • ½ cup (75 g) cocoa powder (or dark cocoa powder)
  • ½ tsp salt
  • ½ tsp baking soda
  • 1 tsp baking powder
  • ¾ cup vegetable oil
  • 2 cups (368 g) granulated sugar
  • 4 eggs, at room temperature
  • 1 tsp vanilla extract
  • 1 cup buttermilk
Instructions
One thing is for sure and that’s c-h-o-c-o-l-a-t-e!
Preheat the oven to 350°F (180°C).
In a microwave-safe bowl, melt the chocolate chips for 30 seconds at a time, until fully melted (about 1 ½ to 2 minutes). Set aside.
In a medium bowl, sift the flour, cocoa powder, salt, baking soda and baking powder together. Set aside.
Each step is smooth sailing!
In a large bowl, using an electric mixer, beat the oil and sugar together for one minute. Add the melted chocolate, then the eggs, one at a time, beating well after each addition.
A chocolate-y smell is in the air and it’s so satisfying!
Fold half of the flour mixture into the oil mixture. Stir in the buttermilk and vanilla, then fold in the remaining of the flour mixture until well-mixed.
It’s almost done and you’re almost there!
Liberally coat a bundt cake pan with spray oil. Then pour the cake batter into it.
Bake for 55 to 65 minutes or until a toothpick inserted in the centre comes out clean.
So, not only is it possible to do the work and make this delicious cake but, it’s enjoyable too!?
Let the cake rest in the bundt pan for 10 minutes. Then slowly, holding the edges of the bundt pan, shake it just a little so as to loosen the cake from the pan. Let the cake rest in the pan for an additional 10 minutes.
Turn the cake out of the pan to cool on a wire rack.
It’s done, it smells amazing, and it was all you. Even though things seem a little unclear, with enough time and thought, the answers will come. And then, after all your hard work is done, you can share your triumphant win/goody with a friend.
