Makes 16 muffins
Ingredients
  • 2 cups (304 g) all purpose flour
  • ¼ tsp salt
  • ½ tsp baking soda
  • 2 tsp baking powder
  • ¾ cup (160 g) sugar
  • ¾ cup vegetable oil
  • 2 large eggs
  • ¼ cup honey
  • 3 tsp lemon juice
  • ½ cup milk
  • 74 g raspberries, chopped
  • 8 g grated lemon zest (2 lemons)
Instructions
Let the change in direction begin...
Preheat the oven to 350°F.
Line a muffin tin with muffin cups and set aside.
Sift the flour, salt, baking soda, and baking powder into a medium bowl and set aside.
Done!
In a separate bowl, using an electric mixer beat the oil and sugar together for about a minute. Add the eggs, one at a time, beating at high speed for each, until the mixture is light.
Stir in the honey, lemon juice, and milk.
The perfect mix of sweet, flavourful, sunshine.
Fold the dry ingredients into the egg mixture.
Stir in the raspberries and lemon zest.
Pour the batter evenly into each liner. Bake the muffins for 25-30 minutes. They’re done when a skewer inserted into the middle comes out clean.
Fun, delicious, easy and the perfect way to add some vibrancy to the day.
