It’s too lovely to leave. If it could be bottled, it would be like releasing a breath of fresh air anytime you need it. Since it can’t be, maybe it can be enjoyed another way...
What if this bright mood could be baked into a deliciously fluffy, summery cake? A cake to be enjoyed as a little ray of sunshine on a dark day. What’s better than reminding yourself the dark days, they don’t last? You are going to get yourself through it. Spread this sunny mood (and bake)!

with a delicate sweet and light flavour,
that’s simple (in ingredients and steps) but satisfying (in all ways),

Prep time: 15 minutes, Bake time: 55-65 minutes
Makes 1 loaf cake
Ingredients
  • 2 cups (304 g) all purpose flour
  • ¼ tsp salt
  • ½ tsp baking soda
  • 2 tsp baking powder
  • ¾ cup (160 g) sugar
  • ¾ cup vegetable oil
  • 2 large eggs
  • ¼ cup honey
  • 3 tsp vanilla extract
  • ½ cup milk
Instructions
Sunshine on the go...
Preheat the oven to 350°F.
Line a loaf pan with parchment paper and set it aside.
Sift the flour, salt, baking soda, and baking powder into a medium bowl and set aside.
...simple, easy.
In a separate bowl, using an electric mixer beat the oil and sugar together for about a minute. Add the eggs, one at a time, beating at high speed for each, until the mixture is light.
Stir in the honey, vanilla, and milk.
The perfect mix of sweet, flavourful, sunshine.
Fold the dry ingredients into the egg mixture.
Pour the batter into the prepared loaf pan. Bake for 55-65 minutes. It’s ready when a skewer inserted into the middle comes out clean.
This cake, while deep and sweet, is only meant to be symbolic - a reminder of warm, sunny days, and your own strength. It’s all you!
