something that brings me back to a simpler time,
something that's familiar (rice krispies) with a grown-up twist (browned butter),
something that’s crunchy, sticky and sweet...

These grownup rice krispies are easy to make and even easier to eat with a gooey sweetness that's perfect for right now.

Prep time: 20 minutes
Serves: 8-10
Ingredients
  • 8 oz unsalted butter
  • 21 oz marshmallows
  • 2 tbsp maple syrup
  • ¼ tsp salt
  • 12 oz Rice Krispies brown rice cereal
Instructions
Here we go...
Line a rectangular pan with parchment paper. Set aside.
Add the butter to a large pot set over medium heat and stir. Cook for a total of 3-5 minutes, until the butter takes on a golden-caramel appearance and has a mildly nutty scent.
This is nice - not too hard. Plus, the butter takes on a unique scent that’s oddly comforting.
Turn the heat down, add the marshmallows to the browned butter and stir until the marshmallows have completely melted into the butter, about 3 minutes. Add the maple syrup and salt and mix well.
Turn the heat to low and add the rice krispies to the pot. Mix until fully incorporated.
The effort going into this step is helping me feel more on track...
Pour then press the mixture evenly into the rectangular pan. Cool in the pan until fully set.
I still don’t quite know where I’m going…but this recipe was easy and the results are delicious. At a time like this? I’ll take it!
