These muffins are sweet but not too sweet with a perfect sprinkling of chocolate (chips) in every bite!

Prep time: 15 minutes, Bake time: 25-30 minutes
Makes: 12 muffins
Ingredients
  • 2 ¾ cup (426 g) all-purpose flour
  • ½ tsp salt
  • ½ tsp baking soda
  • 3 tsp baking powder
  • 1 cup (226 g) granulated sugar
  • 1 cup (208 g) mini semi-sweet chocolate chips
  • 3/4 cup vegetable oil
  • 4 eggs, room temperature
  • 1 tsp vanilla extract
  • 1 cup buttermilk
Instructions
YAY!
Preheat the oven to 350°F (180°C).
In a medium bowl, sift the flour, salt, baking soda, baking powder, and sugar together. Stir until well mixed. Add in the chocolate chips and mix until coated in the flour mixture. Set aside.
In a small bowl, add the oil, eggs, buttermilk and vanilla. Whisk well.
Pour the wet mixture into the dry ingredients.
Nice and easy.
Pour the batter evenly into each liner, filling each all the way to the top. Bake the muffins for 25-30 minutes. It’s ready when a skewer inserted into the middle comes out clean.
