It’s been an endlessly frustrating week and it’s only Tuesday, typical, but I’m not having it. I’ll do something to lighten the mood. I think I’ll bake.
I'm feeling...
something that’s simple yet enjoyable to make,
something with a dough that’s smooth and chunky and satisfying to squish in my hands,
something of a “loaded” cookie - a chocolate chip, shredded coconut, rolled oats, raisins, and walnuts - type cookie,
something of a mixed bag in every bite...

These cookies are fun to make and equally fun to eat with endless combinations and possibilities.

Prep time: 20 minutes, Bake time: 10 minutes
Makes 24 cookies
Ingredients
  • 1 cup (226 g) unsalted butter, room temperature
  • ¼ cup (50 g) granulated sugar
  • ½ cup (115 g) firmly packed brown sugar
  • 2 large eggs, at room temperature
  • 2 tsp vanilla extract
  • 1 ½ cups (242 g) all purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 ¼ cups (131 g) old-fashioned rolled oats
  • 2 cups (400 g) semi-sweet chocolate chips
  • ¾ cup (83 g) walnuts, coarsely chopped
  • ¾ cup (138 g) Sultana or Thompson raisins
  • ¾ cup (95 g) sweetened desiccated flaked coconut
Instructions
Let’s hope that baking will put an end to the frustration!!
Preheat the oven to 350°F.
Line 2 baking sheets with parchment paper and set aside.
Using a hand mixer, whisk the butter and both sugars together until they're light and fluffy - about 3 minutes.
Add the eggs, one at a time, whisking until well-blended. Stir in the vanilla.
Gently fold in the sifted flour, baking soda, baking powder and salt.
...so simple and straightforward...
Mix in the oats, chocolate chips, walnuts, raisins, and coconut, by hand (because fun) or you can use a spatula.
It's both messy AND satisfyingly squishy. Perfect!
Take a small handful of the dough. Gently roll and flatten each handful and place it on the baking sheet, about 2 inches apart.
Bake for 10-12 minutes or until the cookies are browned at the edges.
Cool the cookies on a cooling rack.
This is a fully loaded cookie if ever there was one. It’s all the feels in one place.
