These fluffy muffins are stunning with a sweet and ever-so-slight spicy flavour that’s not too much, just enough to be thoroughly fascinating (and delicious)!

Prep time: 20 minutes, Bake time: 25-30 minutes
Makes 12 muffins
Ingredients
  • 2 cups (304 g) all purpose flour
  • ¼ tsp salt
  • ½ tsp baking soda
  • 2 tsp baking powder
  • ½ tsp cayenne pepper
  • ¾ cup (160 g) sugar
  • ¾ cup vegetable oil
  • 2 large eggs
  • ¼ cup maple syrup
  • 3 tsp maple extract
  • ½ cup milk
Instructions
Annnnnd...GO!
Preheat the oven to 350°F.
Sift the flour, salt, baking soda, baking powder and cayenne pepper in a bowl and set aside.
In a separate bowl, using an electric mixer, beat the oil and sugar together for about a minute. Add the eggs and beat at high speed for 3 minutes - until the mixture is light.
Stir in the maple syrup, maple extract and milk.
This looks (and smells) so good!
Fold the dry ingredients into the egg mixture.
Pour the batter evenly into each liner. Bake the muffins for 25-30 minutes. They’re done when a skewer inserted into the middle comes out clean.
These muffins are bold, daring, and unique and so perfectly embody the mood.
