It’s a dreary morning; gloomy and dark. It’s a comforting-only-if-you're-inside-and-baking-kind of morning. So, I think I’ll bake.

Prep time: 30 minutes, Rest time: 3 hours, Bake time: 40 minutes
Makes 1 large loaf
Ingredients
  • ¾ tbsp active dry yeast
  • 1 tbsp honey
  • 1 tbsp salted butter, melted
  • 1 ½ cups warm water
  • 1 ½ cups (242 g) whole wheat flour
  • 1 ¾ cups (295 g) all purpose flour
  • ½ tbsp coarse sea salt
  • 3 tbsp whole wheat flour
Instructions
Let's make this dreary day better with baking...
In a large bowl stir the yeast, honey, butter and warm water together. Slowly mix in the flours and salt and knead together until it becomes a rough mound. Continue to knead the dough until smooth, about 3 minutes.

Place the dough in a lightly greased bowl and cover with plastic wrap and a towel. Leave it to rise in a warm place for 2 hours or until it's doubled in size. (You can reduce this time although it will make the bread less sour)
Lightly dust a baking sheet with whole wheat flour. Set aside.
Take the dough out of the bowl, shape it into a smooth ball. Leave the dough to rise, uncovered on the prepared baking sheet for 1 hour.

Preheat the oven to 400°F. Fill a baking dish with hot water and place it under the rack where the bread will go. (This is what gives the bread its crusty exterior). Bake for 40-50 minutes until the crust is golden brown and makes a hollow sound when you tap it.
Let the bread cool on the baking sheet for 15 minutes before moving it to a cooling rack. Wait to slice into the bread until it reaches room temperature.
The yeasty scent wafting off this bread as it rises and again as it bakes is the best part of this dreary day.
